This a delicious dish that adds a pop of color to any table. Purple sweet potatoes are a nutritional powerhouse, rich in antioxidants (anthocyanins), which can combat inflammation and boost immunity. Try this in stead of regular mashed potatoes!
Ingredients:
1 Pound purple sweet potatoes
1/2 Cup milk
2 Tablespoons unsalted butter
Salt & pepper to taste
Fresh parsley to garnish
Method:
Cook the Sweet Potatoes in a large pot for 20-25 minutes or until tender. Let them cool slightly, then peel.
Warm milk and butter, add to peeled sweet potatoes and mash to desired consistency.
Garnish with extra butter if desired, fresh parsley, and freshly cracked pepper.
